Crock Pot Korean Shredded Pork |

A little bit sweet and a little bit spicy, this Crock Pot Korean Shredded Pork is perfect in a rice bowl, in a tortilla, or on a bun!
- 3 lb lean pork tenderloin
- ⅓ cup brown sugar (or Stevia)
- ⅓ cup low sodium soy sauce
- 8 cloves garlic, minced (or 10 whole cloves)
- ½ cup red onion, diced
- 2 TBSP sriracha (or 1 jalapeno, diced), more if you like it spicy
- 2 TBSP fresh ginger, grated
- 1 TBSP rice wine vinegar
- 2 TBSP sesame seeds
- optional garnish: shredded cabbage, cilantro, lime wedges, more sriracha, green onions, and/or more sesame seeds
- Combine brown sugar, soy sauce, minced garlic, red onion, sriracha, ginger, rice vinegar, and sesame seeds in a small bowl.
- Add the pork to slow cooker and cover with sauce.
- Cook for 7 to 8 hours on LOW or 3 to 4 hours on HIGH. Uncover and shred pork in pot with two forks. Stir, and cook for 30 more minutes with the lid off until sauce thickens up.
- Serve with optional garnish if desired.
