Hearty and delicious, this Instant Pot Stuffed Bell Pepper Soup is great for lunch or dinner!
- 1 pound ground sausage (or your ground meat of choice)
- 3 bell peppers, diced, any color
- 1 small onion, diced
- 1 tsp salt
- 1 tsp pepper
- ½ tsp dried basil
- ½ tsp dried oregano
- 1 cup rice, uncooked
- 1 14 oz can diced tomatoes, undrained
- 1 28 oz can crushed tomatoes
- 2 TBSP Worcestershire sauce
- 3 cups beef broth
- 1 cup water
- cheddar cheese for topping
- Using the brown/saute setting on pressure cooker, brown ground meat.
- Add diced bell peppers, onion, salt, pepper, basil, oregano, rice, diced tomatoes, crushed tomatoes, Worcestershire sauce, beef broth, and water to the pot.
- Stir well.
- Cover, make sure release valve is closed, and cook on HIGH for 15 minutes.
- Use natural release.
- Ladle into bowls and top with shredded cheddar cheese before serving.
