Instant Pot Stuffed Bell Pepper Soup

Hearty and delicious, this Instant Pot Stuffed Bell Pepper Soup is great for lunch or dinner!
Ingredients
  • 1 pound ground sausage (or your ground meat of choice)
  • 3 bell peppers, diced, any color
  • 1 small onion, diced
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • 1 cup rice, uncooked
  • 1 14 oz can diced tomatoes, undrained
  • 1 28 oz can crushed tomatoes
  • 2 TBSP Worcestershire sauce
  • 3 cups beef broth
  • 1 cup water
  • cheddar cheese for topping
Instructions
  1. Using the brown/saute setting on pressure cooker, brown ground meat.
  2. Add diced bell peppers, onion, salt, pepper, basil, oregano, rice, diced tomatoes, crushed tomatoes, Worcestershire sauce, beef broth, and water to the pot.
  3. Stir well.
  4. Cover, make sure release valve is closed, and cook on HIGH for 15 minutes.
  5. Use natural release.
  6. Ladle into bowls and top with shredded cheddar cheese before serving.
