Crock Pot Herb Garlic Parmesan Potatoes

An easy and delicious slow cooker side dish!
  • 3 pounds assorted baby potatoes (red, yellow, purple), halved
  • 1 TBSP olive oil
  • 2 TBSP butter
  • 6 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried dill
  • Kosher salt and freshly ground black pepper, to taste
  • ¼ cup Parmesan
  • 2 to 3 TBSP fresh parsley, chopped
  1. Place scrubbed potatoes, olive oil, butter, garlic, oregano, basil and dill into the slow cooker.
  2. Season with salt and pepper to taste.
  3. Stir everything to combine.
  4. Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours, or until tender.
  5. Sprinkled with Parmesan, garnish with parsley, and add more salt and pepper if necessary.
  6. Serve immediately.
