Crock Pot Spaghetti Squash and Meatballs

You can't go wrong with this quick and easy low carb alternative to traditional spaghetti and meatballs!
  • 1 medium spaghetti squash, rinsed
  • 1 or 2 jars favorite spaghetti sauce
  • 1 lb frozen, fully cooked meatballs
  1. Cut spaghetti squash in half widthwise.
  2. Scoop out seeds and place cut side down in slow cooker.
  3. Place meatballs around squash.
  4. Pour spaghetti sauce on top of meatballs.
  5. Cover and cook on LOW 6 to 7 hours, or on HIGH 3 to 4 hours.
  6. Remove lid and let squash cool for a few minutes before removing to a cutting board with kitchen gloves or tongs.
  7. Scrape out squash flesh and place in a colander to allow moisture to drain out.
  8. Serve squash with meatballs and sauce on top, and sprinkle with Parmesan cheese and fresh parsley if desired.
