Crock Pot Ropa Vieja

The flavors of this Crock Pot Ropa Vieja dish blend beautifully!
  • 3 tsp olive oil, divided
  • 1½ pounds flank steak, trimmed
  • ¾ tsp kosher salt, divided
  • ½ tsp freshly ground black pepper, divided
  • 1 medium white onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 4 garlic cloves, minced
  • ⅓ cup golden raisins
  • 1 cup beef stock
  • 3 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • ⅓ cup pimiento-stuffed olives, halved
  • chopped fresh cilantro
  • hot cooked rice
  1. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat.
  2. Cut steak into quarters, and sprinkle steak evenly with ¼ teaspoon salt and ¼ teaspoon black pepper.
  3. Add steak to pan, and cook 4 minutes on each side or until browned.
  4. Transfer steak to slow cooker.
  5. Add remaining 1 teaspoon oil, onion, bell peppers, and garlic to pan, cooking 3 minutes or until slightly softened.
  6. Stir in raisins, and transfer onion mixture to slow cooker.
  7. Combine stock, tomato paste, cumin, oregano, tomatoes, remaining ½ teaspoon salt, and remaining ¼ teaspoon black pepper in a medium bowl. Pour tomato mixture over steak and vegetables in slow cooker.
  8. Cover and cook on LOW for 8 hours or until steak is very tender.
  9. Remove steak from slow cooker and shred using 2 forks.
  10. Stir steak, olives, and cilantro into sauce.
  11. Serve steak mixture over rice.
