  • 1 large onion, finely diced
  • 1 medium carrot, minced
  • ¼ cup minced celery
  • 6 garlic cloves, minced
  • 3 tablespoons olive oil
  • ¼ cup tomato paste
  • ½ cup red wine or beef broth
  • 2 cans (28 oz) crushed tomatoes
  • 2 slices bread
  • 1 cup half-and-half
  • 1½ teaspoon salt
  • 1 teaspoon black pepper
  • 1½ lbs very lean ground beef
  • ¼ cup minced fresh basil
  • Salt and pepper to taste
  1. In a skillet, over medium-high heat, brown onion, carrot, celery, and garlic in oil until they are soft (just a few minutes). Reduce heat to low and stir in tomato paste. Add red wine (or beef broth), and mix until smooth. Bring to a simmer then remove from heat and transfer to slow cooker. Stir in crushed tomatoes.
  2. Place torn bread slices in a large bowl and pour in half-and-half. Give it a stir until a thick paste is formed. Add ground beef, salt, and pepper, and mix with hands until combined.
  3. Crumble uncooked beef mixture into tomato mixture in slow cooker.
  4. Gently stir sauce until combined.
  5. Cover crockpot and cook on high 4-5 hours OR on low 6-7 hours.
  6. Before serving, use a spoon to break up meat into bite-sized chunks and stir basil into sauce. Season sauce with salt and pepper and serve over hot pasta.
